Ingredients
- egg3 eggs (150 g)
- berries3/4 cup (115 g)
- milk1/3 cup (80 ml)
- cottage cheese1/4 cup (60 g)
- all-purpose flour3 tbsp (24 g)
- vanilla protein powder2 tbsp (20 g)
- vanilla extract1/2 tsp
- salta pinch
- honey1/2 tbsp (10 g)
- ghee1 tbsp
Method
Preheat the oven to 425F (220C).
Add the eggs, milk, cottage cheese, flour, protein powder, vanilla extract, salt and honey to a blender and blend until smooth.
Add the ghee to a cast iron pan and place it in the hot oven to preheat for at least 15 minutes.
Carefully remove the hot pan, add the blended batter and the berries - it should sizzle on contact.
Return to the oven and bake 15-20 minutes, until brown around the edges and no wet batter is visible.
Enjoy warm, in slices.
