Ingredients
  • Almond butter1 cup (250 g)
  • Baking soda1/2 tsp
  • Salt1/4 tsp
  • Water, slightly warmas needed
  • Sugar-free chocolate chips3 oz (85.05 g)
  • Brown sugar replacement1/4 cup (50 g)
  • Allulose2 tbsp (20.29 g)
  • Large eggs, room temperature2 large eggs
  • Vanilla extract1 tsp
  • Chocolate whey protein powder3/4 cup (81 g)
  • Cocoa powder1 tbsp
  • Grass-fed gelatin (or 2 tbsp collagen)1 tbsp (7.1 g)
  • Espresso powder1/2 tsp (optional)
Method
1. Preheat the oven to 325 F (165 C) and line a large baking sheet with a silicone baking mat. 2. In a large bowl, beat the almond butter together with the brown sugar replacement and allulose until well combined. 3. Add the eggs and vanilla extract and beat until smooth. 4. All at once, add the chocolate whey protein powder, cocoa powder, gelatin, espresso powder, baking soda and salt. Beat until a cohesive dough forms. 5. If the dough is very stiff and the dry ingredients will not incorporate well, add warm water 1 tablespoon at a time. The dough should be stiff but malleable. 6. Fold in the sugar-free chocolate chips until well distributed. 7. Roll the dough into 12 even balls about 2 inches in diameter and press each ball down to about 1 inch thick. 8. Bake for 8 to 10 minutes until puffed and firm around the edges but still soft in the middle. 9. Remove and let cool completely on the pan.
