Method
1. Preheat the oven to 350°F and line a 12-cup muffin tin. 2. Reserve ½ cup of the diced apples for topping; mix the crumble ingredients (sweetener, flour, melted butter, cinnamon) and set aside. 3. Whisk together the sweetener, Greek yogurt, egg and vanilla. 4. In another bowl, mix the flour, protein powder, baking powder, baking soda and salt. 5. Add the dry ingredients to the wet mixture alternately with the skim milk. 6. Fold in the 1½ cups of diced apples. 7. Divide the batter between the 12 muffin cups and top with the reserved apples and cinnamon crumble. 8. Bake for 25–30 minutes, until a toothpick comes out without wet batter. Cool completely before adding the optional cinnamon glaze.
