Beef Stroganoff (High Protein)
A classic creamy beef stroganoff with mushrooms, Dijon and sour cream over noodles - rich, comforting and around 32g of protein per serving.

Ingredients
- beef sirloin or rump1 lb (450 g), thinly sliced
- butter1 tbsp (14 g)
- paprika1 tsp
- Worcestershire sauce1 tbsp
- beef broth1 cup (240 ml)
- sour cream1/2 cup (120 g)
- Dijon mustard1 tsp
- egg noodlesto serve
- parsleyfresh, to serve
- saltto taste
- black pepperto taste
- flour1 tbsp (optional)
- olive oil1 tbsp (15 ml)
- butter1 tbsp (14 g)
- onion1, sliced
- garlic2 cloves, minced
- mushrooms8 oz (250 g), sliced
Method
Slice the beef thinly across the grain and season with salt, pepper and a light dusting of flour (optional).
Heat olive oil and butter in a pan over high heat; sear the beef in batches for 1-2 minutes until browned, then remove (it finishes in the sauce).
In the same pan, add butter and cook the onion for 3 minutes, then garlic for 30 seconds, then mushrooms for 5-6 minutes until golden. Season with salt and pepper.
Add paprika, Worcestershire sauce and beef broth; bring to a simmer, then lower the heat and stir in the sour cream and Dijon (do not boil).
Return the seared beef with its juices and simmer gently 2-3 minutes until the sauce thickens and the beef is tender. Adjust salt and pepper.
Spoon over egg noodles, rice or mashed potatoes and top with fresh parsley.
