Ingredients
  • Eggs2 eggs
  • Maple syrup1/4 cup (60ml)
  • Peanut butter2 tbsp
  • Milk1/4 cup (60ml)
  • Vanilla extract1 tsp
  • Skyr1 cup (255g)
  • Cooked black beans, mashed1 cup (170g)
  • Ground oats or oat flour1/2 cup (50g)
  • Cornstarch1 tbsp
  • Cocoa powder1/2 cup (50g)
  • Flaxseed meal1/4 cup (30g)
  • Baking powder1 tsp
  • Salt1/2 tsp
  • Cinnamon1 tsp
Method
1. In a bowl, whisk together the eggs, maple syrup, peanut butter, milk, vanilla, skyr and mashed black beans. 2. Sift in the dry ingredients (ground oats, cornstarch, cocoa powder, flaxseed meal, baking powder, salt, cinnamon). 3. Gently fold with a spatula just until the batter forms. 4. Pour into a lined 8x8-inch (20x20cm) pan, smooth the top and shake the pan a bit. 5. Bake at 350F (180C) for 25 minutes. 6. Cool in the pan for at least 2 hours, then slice into 9 pieces. 7. Store in the fridge for up to a week.
