Budget Air Fryer Beef Skewers
Kebab-house style beef skewers from a cheap cut, made tender with grated onion in the marinade and charred in the air fryer - served with sumac onions and warm flatbread.

Ingredients
- beef chuck or rump500 g, cubed
- tomato paste1 tbsp (15 g)
- salt1 tsp (6 g)
- black pepper0.5 tsp (1 g)
- bell pepper1 (150 g)
- onion (skewer squares)1 (150 g)
- red onion1 (150 g)
- sumac1 tsp (3 g)
- flatbreadsto serve
- parsleyfor sumac onions
- onion (grated)1 medium (150 g)
- olive oil2 tbsp (30 g)
- lemon juice1 tbsp (15 g)
- garlic3 cloves (15 g)
- smoked paprika2 tsp (5 g)
- cumin1 tsp (3 g)
- oregano1 tsp (2 g)
- chilli flakes0.5 tsp (1 g)
Method
Cut the beef into 3 cm cubes.
Grate the onion and squeeze the juice straight into the meat; add the oil, lemon juice, garlic, spices and tomato paste and mix by hand.
Marinate at least 2 hours, ideally overnight.
Soak wooden skewers 15 minutes, then thread the beef with squares of pepper and onion, packing the pieces tight.
Air fry at 200C/400F for 12-14 minutes, turning at the 7-minute mark, until the corners are charred.
Toss the red onion with parsley, lemon and sumac; warm the flatbreads in a dry pan 20-30 seconds a side.
Rest the skewers 3-4 minutes and serve at medium (57-60C/135-140F).
