Ingredients
- almond butter1/4 cup (60 g)
- nutmeg and ground gingera pinch each
- rolled oats1/2 cup (45 g)
- vanilla whey protein powder1 scoop (30 g)
- shredded carrots1/4 cup (30 g)
- raisins2 tbsp (20 g)
- walnuts2 tbsp (15 g)
- shredded coconut2 tbsp (10 g)
- honey1 tbsp (20 g)
- cinnamon1/4 tsp
Method
Combine the almond butter, oats, whey protein, shredded carrots, raisins, walnuts, coconut, honey, cinnamon, nutmeg and ginger in a food processor and blend until well combined (the consistency will be similar to sand).
Grab about 1 tablespoon of the mixture and squeeze it in your palm to make it stick, then form it into a ball.
Repeat until you have 10 balls.
Place on a parchment-lined baking sheet and chill in the fridge for 1 hour.
Transfer to an airtight container and keep refrigerated up to 3 weeks (or freeze up to 3 months).
