Chicken Piccata

Ingredients
- chicken breasts3 (680 g)
- chicken broth2 cups
- lemon juice1/3 cup
- capers1/4 cup
- parsley3 tbsp
- flour3/4 cup (90 g)
- salt1.5 tsp
- black pepper3/4 tsp
- olive oil4 tbsp
- butter4 tbsp
- shallot1
- garlic3 cloves
- white wine1/4 cup (optional)
Method
Pound the chicken to 1/4-inch thick, season, and dredge in flour.
Heat olive oil and butter in a large skillet; sear the chicken in batches, 3-4 minutes per side. Remove to a plate.
In the same skillet, cook the shallot and garlic for 30 seconds, then deglaze with white wine and reduce by half (or skip straight to broth).
Stir in the chicken broth, lemon juice and capers; simmer 3 minutes.
Return the chicken to the skillet, spoon sauce over, and cook 2 minutes.
Swirl in the remaining butter, sprinkle with parsley, and garnish with lemon slices.
