Chocolate Chip Protein Muffins

Ingredients
- old fashioned oats1 3/4 cups (160 g)
- egg2 large eggs (100 g)
- vanilla extract2 tsp
- chocolate chips1/2 cup (85 g)
- vanilla whey protein powder1/2 cup (60 g)
- baking powder1 tsp
- baking soda3/4 tsp
- cinnamon1/4 tsp
- salt1/2 tsp
- plain Greek yogurt1 cup (240 g)
- maple syrup1/3 cup (110 g)
- neutral oil1/3 cup (75 ml)
Method
Preheat oven to 350F (175C) and line a 12-muffin pan with silicone or paper liners.
Add all ingredients except the chocolate chips and flaky sea salt to a blender.
Blend until smooth, scraping down the sides as needed (about 30 seconds).
Gently stir the chocolate chips into the batter.
Fill the muffin liners about 3/4 full; top with extra chocolate chips if desired.
Bake 16-18 minutes until the tops are golden and a toothpick comes out mostly clean.
Sprinkle with flaky sea salt while warm if desired; rest 10 minutes in the pan, then transfer to a wire rack.
