Ingredients
  • bananas350 g (3 large, mashed)
  • baking powder1/2 tsp (2 g)
  • salt1/2 tsp (1 g)
  • chocolate chunks1/4 cup (60 g)
  • nonfat Greek yogurt3/4 cup (170 g)
  • egg1 medium egg (50 g)
  • cashew or almond milk1/2 cup (120 ml)
  • oat flour1/2 cup (60 g)
  • all-purpose flour1/2 cup (60 g)
  • granular sugar substitute1/2 cup (96 g)
  • whey/casein protein powder2 scoops (60 g)
  • baking soda3/4 tsp (3 g)
Method
Preheat the oven to 350F (175C). Mix all the wet ingredients thoroughly in a bowl. Mix all the dry ingredients in a separate bowl. Add the dry ingredients to the wet ingredients and mix - but do not overbeat. Fold in the chocolate chunks. Pour into a loaf tin lined with parchment paper or sprayed with cooking spray. Bake for 55 minutes to 1 hour - take it out right when it passes the toothpick test. Rest for 15 minutes, add extra chocolate chunks on top if you like, then slice into 6 and store in the fridge.
