Ingredients
  • Oat flour2 cups (80g)
  • PB2 powdered peanut butter4 Tbsp (26g)
  • Ground cinnamon1 Tbsp
  • Quick oats1 cup (40g)
  • Chocolate chips1 serving
  • Large eggs2 large
  • Truvia calorie-free sweetener4 Tbsp
  • Sugar-free chocolate syrup2 Tbsp
  • Unsweetened cocoa powder5 Tbsp
  • Unsweetened applesauce1 cup
  • Vanilla Greek yogurt2 servings
  • Baking powder2 tsp
  • Chocolate protein powder2 scoops
Method
1. If you do not have oat flour, blend rolled oats in a blender to make your own. 2. Add to a large bowl: oat flour, eggs, sweetener, chocolate syrup, cocoa powder, applesauce, Greek yogurt, baking powder, chocolate protein powder, PB2, cinnamon and quick oats. Mix everything together. 3. Spray a baking pan with non-stick cooking spray and scoop 12 cookies onto the pan. 4. Preheat the oven to 375F. Bake 10-12 minutes; let cool a few minutes before eating.
