  • cottage cheese3 cups
  • maple syrup2 tbsp
  • almond butter1/4 cup
  • vanilla extract1/2 tsp
  • mini chocolate chips2 tbsp
  • maple syrup1/3 cup
  • vanilla extract1 tsp
  • oat flour2 tbsp
  • almond butter2 tbsp
  • mini chocolate chips2 tbsp
  • almond flour2 tbsp
  • vanilla protein powder2 tbsp
  • salt1/8 tsp
Method
1. Add the cottage cheese, maple syrup, vanilla extract, oat flour, and almond butter to a blender and blend until completely smooth. 2. Stir in the mini chocolate chips, then transfer the mixture to a loaf pan and freeze for 20–30 minutes. 3. Make the cookie dough: mix the almond flour, protein powder, salt, maple syrup, almond butter, and vanilla until a dough forms, then fold in the mini chocolate chips. 4. Roll the dough into small balls and freeze until firm. 5. Stir half of the dough balls into the partially frozen ice cream and return to the freezer for 4–5 hours until scoopable. 6. Let sit at room temperature for 15–20 minutes before serving, then scoop and top with the remaining cookie dough balls.
