  • pork tenderloin1.5-2 lb (800 g)
  • olive oil2 tbsp (30 g)
  • paprika1/2 tsp (2 g)
  • heavy cream1 cup (240 g)
  • garlic3 cloves (15 g)
  • Dijon mustard1 tbsp (15 g)
  • Parmesan cheese1/2 cup (50 g)
  • chicken broth1/2 cup (120 g)
  • olive oil2 tbsp (30 g)
  • garlic powder1 tsp (3 g)
  • onion powder1 tsp (3 g)
  • paprika1 tsp (3 g)
  • dried thyme1 tsp (2 g)
  • saltto taste
  • black pepperto taste
  • baby potatoes1.5 lb (680 g)
Method
Preheat oven to 400F (200C). Pat the pork dry and rub with olive oil, garlic powder, onion powder, paprika, thyme, salt and pepper. Toss the halved potatoes with olive oil, salt, pepper and paprika; spread around the edges of a baking dish. Whisk together the heavy cream, garlic, Dijon mustard, Parmesan, chicken broth and thyme; taste and adjust seasoning. Place the seasoned pork in the center of the pan and pour the creamy sauce over the pork and potatoes. Bake 35-45 minutes until the pork reaches 145F (63C) internal temperature, spooning sauce over the pork once during cooking. Rest 5-10 minutes before slicing; serve with the creamy sauce and roasted potatoes.
