Ingredients
  • butter and olive oil spread1/2 cup (120 g), melted
  • peanut butter2/3 cup (170 g)
  • raw honey2/3 cup (225 g)
  • egg2 eggs (100 g)
  • vanilla extract2 tsp
  • sprouted whole grain flour3/4 cup (95 g)
  • cacao powder1/2 cup (60 g)
  • baking powder1/2 tsp
  • salt1/2 tsp
  • chocolate chips1/2 cup (85 g)
Method
Preheat oven to 350F (175C). Spray an 8x8 baking pan with cooking spray. Melt the butter spread in a large microwave-safe bowl; set aside to cool. Add honey and whisk until combined. Add eggs and vanilla, whisk again. Add the dry ingredients and whisk together, then stir in the chocolate chips. Pour half of the brownie batter into the prepared pan. Dollop half of the peanut butter over it in spoonfuls. Top with the remaining batter, then dollop the rest of the peanut butter on top. Swirl the peanut butter into the batter with a butter knife in any design you like. Bake 25-30 minutes, until a toothpick comes out with coarse crumbs. Cool about 30 minutes before slicing into 9.
