Easy High Protein Muffins

Ingredients
- oat flour40g
- chocolate chips15g (optional)
- blueberries50g (optional)
- ripe bananas3 ripe bananas (~400g)
- peanut butter64g
- peanut butter powder32g
- egg2 eggs (100g)
- vanilla protein powder30g
- baking powder3g
- sugar-free maple syrup30g
- salta pinch
Method
Mash the ripe bananas in a bowl with a fork.
Add the oat flour, peanut butter, peanut butter powder, eggs, protein powder, baking powder, maple syrup and salt; mix until well combined (or blend everything).
Fold in chocolate chips or blueberries if using.
Evenly distribute the mix into a muffin tin (makes about 9 muffins).
Bake at 350F (175C) for 20 minutes until a knife comes out clean.
Let cool for about 30 minutes; top with flaky salt if desired.
