Ingredients
  • rolled oats2 cups (160 g)
  • vanilla whey protein powder1/2 cup (60 g)
  • natural peanut butter1/2 cup (128 g)
  • honey3 tbsp (60 g)
  • egg whites2 egg whites (90 ml)
Method
Preheat the oven to 325F (163C) and line a large baking sheet with parchment paper. Whisk the egg whites until stiff peaks form - this creates larger granola clusters. Add the oats, whey protein powder, peanut butter and honey to a large bowl and mix until evenly combined. Gently fold in the whipped egg whites. Pour the mixture onto the baking sheet and spread out evenly. Break into your preferred cluster size. Bake for 18-25 minutes, rotating the pan halfway through. Do not stir while it bakes. Remove once the edges are lightly golden - it will continue to crisp up as it cools. Add optional dried fruit, nuts or coconut after baking.
