Fried Keto Sour Cream Glazed Donuts

Ingredients
- coconut flour1/4 cup + 2 tbsp (45 g)
- warm water3 tbsp (45 ml)
- sour cream1/2 cup (120 g)
- vanilla extract1 tsp
- liquid stevia20 drops
- butter (glaze)2 tbsp (28 g)
- powdered sweetener (glaze)1/2 cup + 2 tbsp (120 g)
- milk substitute2 tbsp (30 ml)
- psyllium husk3 tbsp (15 g)
- unflavored protein powder1 scoop (29 g)
- powdered monkfruit sweetener1/4 cup (48 g)
- baking powder1/2 tsp
- nutmeg1/2 tsp
- salt1/4 tsp
- egg2 eggs (100 g)
- butter3 tbsp (42 g)
Method
Fill a pot with 2 inches of coconut or avocado oil (do not heat yet).
Measure, sift and whisk the dry ingredients together.
Beat the eggs with the water, stevia, melted butter and vanilla, then mix in the sour cream.
Add the dry ingredients in 2 batches until a stiff dough forms; rest 15 minutes.
Heat the oil to 340F.
Scoop and roll into 21 balls, or divide into 6 ring donuts.
Fry balls 6-8 minutes (rings 10-12), turning, until dark and cooked through.
Drain on paper towels and cool completely.
Whisk the glaze ingredients until thick; dunk the holes or spoon over the rings.
Let set 10 minutes before eating.
