Ingredients
- Almond milk240ml (1 cup)
- Greek yogurt, for frosting170g
- Confectioners sugar substitute60g
- Cocoa powder, for frosting30g
- Egg white144ml
- Canned pumpkin122g
- All-purpose flour120g
- Granulated sugar substitute120g
- Vanilla protein powder1 scoop
- Cocoa powder30g
- Baking soda4g
- Baking powder2g
Method
1. Preheat the oven to 350°F (175°C).
2. Mix the wet ingredients: almond milk, egg white and canned pumpkin.
3. Mix the dry ingredients: flour, granulated sugar substitute, protein powder, cocoa powder, baking soda and baking powder.
4. Combine wet and dry ingredients and mix thoroughly, avoiding clumps.
5. Spread the batter into a sprayed or parchment-lined square baking dish and bake for 35 minutes, taking out slightly underdone.
6. While the brownies bake, mix the frosting: Greek yogurt, confectioners sugar substitute and cocoa powder, then refrigerate for 10 minutes.
7. Spread the frosting over the cooled brownies, add sprinkles, and let rest 10+ minutes in the fridge if you want the frosting to harden.
8. Slice 3x3 into 9 brownies and enjoy.
