Ingredients
  • Oat flour1½ cups
  • Maple syrup⅓ cup
  • Eggs2
  • Olive oil⅓ cup
  • Plain Greek yogurt½ cup
  • Cocoa powder⅓ cup
  • Baking soda1 tsp
  • Baking powder½ tsp
  • Salt½ tsp
  • Chocolate chips⅓ cup, plus extra for topping
  • Grated zucchini½ cup
  • Spinach1 cup
  • Chickpeas, drained1 cup
Method
1. Preheat the oven to 350°F and grease a 12-cup muffin tin (or line with liners). 2. In a large bowl, mix the oat flour, cocoa powder, baking soda, baking powder and salt. 3. In a blender or food processor, combine the grated zucchini, spinach, chickpeas, maple syrup, eggs, oil and Greek yogurt; blend until completely smooth. 4. Pour the wet mixture into the dry ingredients and gently mix, folding in the chocolate chips. 5. Scoop the batter evenly into the muffin tin and top with extra chocolate chips and a pinch of sea salt, if desired. 6. Bake for 20–24 minutes, until a toothpick inserted in the center comes out clean.
