High Protein Beef Lasagna (Meal Prep)

Ingredients
- onion1 onion (150 g)
- mozzarella30 g
- saltto taste
- black pepperto taste

- garlic2 cloves (10 g)
- beef mince (5% fat)500 g
- chicken stock cubes2 cubes (20 g)
- passata500 ml
- dry red lentils50 g
- lasagna sheets8 sheets (80 g)
- fat-free cottage cheese500 g, blended
- spinach1 bag (200 g)
Method
Cook the onion and garlic until softened.
Add the beef mince and cook until browned.
Add the stock cubes, passata and dry red lentils; season with salt, pepper and herbs.
Let the mixture simmer for around 20 minutes until it reduces.
Meanwhile, cook the spinach in a separate pan until wilted; strain the excess water and mix into the blended cottage cheese.
Layer the lasagna with the beef mixture, lasagna sheets and cottage cheese mixture; repeat the layers and finish with mozzarella on top.
Bake at 180C/350F for around 50 minutes, or until cooked through and golden on top.
