High Protein Biscoff Blondies
Soft, caramel-like blondies with that unmistakable Biscoff flavour, crunchy biscuit pieces and a creamy Biscoff topping. 116g of protein per batch.

Ingredients
- Ground oats90g
- Unsweetened almond milk200–250ml
- Erythritol60g
- Sugar-free white chocolate drops5g
- Lotus Biscoff biscuits4
- Biscoff spread20g
- Unflavored whey protein80g
- Skyr200g
- Vanilla flavor powder12g
- Bananas2
- Baking powder7g
- Eggs2
- Psyllium husks6g
- Salta pinch
Method
1. Cut the bananas into pieces and place them in a large bowl.
2. Add the ground oats, whey protein, skyr, vanilla flavor powder, baking powder, eggs, psyllium husks, salt, almond milk and erythritol, and mix into a smooth batter, mashing the bananas with a whisk as you go.
3. Pour the batter into an ovenproof dish and press the Lotus Biscoff biscuits into the top.
4. Bake for 25–30 minutes at 180°C top/bottom heat – the blondies should stay nice and moist inside.
5. Let cool slightly, then top with Biscoff spread and white chocolate drops. Slice into about 18 pieces.
