Ingredients
- Milk of choice3/4 cup, warmed to 110°F
- Salt1 tsp
- Brown sugar alternative1 cup
- Cinnamon2 tbsp
- Vanilla or cinnamon protein powder2 scoops
- Milk of choice1/3-1/2 cup
- Light cream cheese8 oz (1 block), softened
- Powdered sugar alternative1 cup
- Vanilla protein powder1/2 cup
- Vanilla extract1 tsp
- Milk of choice4 tbsp
- Honey, maple syrup or sugar1 tbsp
- Stevia or monk fruit sweetener1/2 cup
- Active dry yeast2 1/2 tsp
- Greek yogurt (0% fat)1/2 cup, room temperature
- Salted butter1/2 cup, very softened
- Eggs2, room temperature
- Vanilla extract1 tsp
- Bread flour540 g (4 1/2 cups)
Method
1. Activate the yeast: stir the warm milk with the honey (or maple syrup/sugar) and yeast; rest 5-7 minutes until foamy.
2. Whisk the flour and salt in a large bowl. In a mixer bowl, combine the yeast mixture with the stevia or monk fruit, Greek yogurt, softened butter, eggs and vanilla, then add the flour mixture.
3. Knead on medium for 5-7 minutes until elastic and pulling away from the sides. Rest 5 minutes, then cover and rise in a warm spot for 30-45 minutes.
4. Mix the filling: protein powder, brown sugar alternative, milk, cinnamon and vanilla until well combined.
5. Roll the dough out to a 24x15 inch rectangle. Spread the filling evenly over the surface, leaving a small border around the edges.
6. Starting on the long end, roll tightly into a log and cut into 12 rolls. Place in a greased 9x13 inch pan, cover and proof 25-30 minutes while the oven preheats to 350°F.
7. Bake at 350°F for 20-22 minutes, then raise the oven to 375°F and bake 5-7 more minutes, until golden and cooked through.
8. While the rolls bake, beat the cream cheese frosting ingredients (or whisk the protein drizzle ingredients) until smooth.
9. Rest the rolls 10-15 minutes, spread with frosting and serve warm.
