High-Protein Oat Cookies
My favorite high-protein cookies — buttery, oaty, loaded with nuts and dark chocolate. 8 scoops of protein powder turn a classic cookie into a protein bomb. Makes 16-20.

Ingredients
- Unsalted butter, softened150g
- Chopped nuts or mixed seeds150g
- Dark chocolate, roughly chopped150g
- Salt2 pinches
- Nut butter150g
- Light brown soft sugar240g
- Large eggs2 large
- Protein powder8 scoops
- Plain flour100g
- Bicarbonate of soda1 tsp
- Ground cinnamon1 tsp
- Rolled oats200g
Method
1. Heat the oven to 170C (150C fan / 340F / Gas 3).
2. Beat the butter, nut butter and sugar 1-2 minutes until pale and light.
3. Add the eggs; mix until thoroughly combined.
4. Add the protein powder, flour, bicarbonate of soda, cinnamon and salt; mix until combined.
5. Add the oats, chopped nuts and chocolate; mix until evenly distributed.
6. Divide into 16-20 portions; shape into rough balls on lined baking sheets.
7. Bake 10-12 minutes until golden brown. Cool on a wire rack.
