High-Protein Peanut Butter Cereal
A crunchy homemade alternative to store-bought cereal - little baked peanut butter bites made from millet, oat flour and peanut butter. Incredibly crunchy, naturally sweet, and great for meal prep.

Ingredients
- dry millet180 g (1 cup)
- rolled oats100 g, blended into flour
- peanut butter powder40 g (1/3 cup)
- natural peanut butter3 tbsp (48 g)
- liquid sweetener3 tbsp
Method
Rinse the millet well, cook it, and let it cool completely (refrigerate overnight for the best texture).
Blend the rolled oats into a fine oat flour.
Mix the cooked millet, oat flour, peanut butter powder, natural peanut butter and liquid sweetener into a thick dough - add a little more oat flour if it feels too wet.
Roll the mixture into small balls (about 5g each).
Bake at 140C (285F) for 18-22 minutes (or air fry), shaking halfway through.
Let cool completely - the cereal crisps up even more as it cools.
Store in an airtight jar and enjoy with milk or straight from the jar.
