Ingredients
  • almond flour3/4 cup (72g)
  • unsalted butter2 tbsp melted (30g)
  • vanilla extract1 tsp + 1/2 tsp
  • milk1-2 tbsp if needed
  • light cream cheese3 tbsp softened (45g)
  • powdered sweetener2 tbsp (16g)
  • milk2-3 tsp to thin
  • vanilla protein powder1/2 cup, 2 scoops (60g)
  • coconut flour1 tbsp (8g)
  • monk fruit sweetener1/3 cup (65g)
  • baking powder1.5 tsp (7g)
  • salt1/4 tsp + a pinch
  • cottage cheese1/2 cup blended smooth (120g)
  • nonfat Greek yogurt1/4 cup (60g)
  • egg2 large eggs (100g)
Method
Heat oven to 350F (175C) and grease a 6-cavity donut pan. Blend the cottage cheese completely smooth. Whisk the almond flour, protein powder, coconut flour, sweetener, baking powder and salt until lump-free. In another bowl whisk the blended cottage cheese, Greek yogurt, eggs, melted butter and vanilla until smooth. Fold the wet into the dry just until no dry powder remains; add milk a splash at a time if too thick to pipe. Pipe into the pan until each cavity is two-thirds full. Bake 12-15 minutes until the tops spring back when pressed. Cool in the pan 10 minutes, then on a rack. Whisk the cream cheese, powdered sweetener, vanilla, salt and milk into a glaze; dip each donut.
