Ingredients
- lean ground beef (90/10)1000 g
- sesame seeds1 tbsp
- gochujang6 tbsp (90 g)
- gochugaru2.5 tbsp (18 g)
- soy sauce2 tbsp
- oyster sauce2.5 tbsp (38 ml)
- honey1.5 tbsp (30 g)
- water3 tbsp
- sea saltto taste
- black pepperto taste
- jasmine rice (raw)375 g
- egg4 large eggs (200 g)
- egg whites4 whites (150 ml)
- green onions5 stalks (75 g)
- garlic6 cloves (30 g)
- fresh chilis5 pieces (50 g)
- avocado oil1.5 tbsp
- sesame oil1.25 tbsp
Method
Wash the jasmine rice 3-4 times until the water runs clear. Cook with 450ml water in a rice cooker. Cool completely (overnight in the fridge) to prevent mushy rice.
Mix the gochujang, gochugaru, soy sauce, oyster sauce, honey, water and black pepper into a sauce.
Brown the ground beef in a hot pan with avocado oil, then add garlic and fresh chilis.
Add the day-old rice and sauce; toss until everything is coated and slightly crisp.
Push the rice aside, soft-scramble the eggs and egg whites, then fold through.
Finish with sesame oil, green onions, sesame seeds and sea salt. Divide into 5 servings.
