No-Bake Salted Caramel Protein Brownie Bars
Fudgy no-bake brownie base layered with silky salted caramel and coated in dark chocolate. High-protein, gluten-free and no oven required.

Ingredients
- Medjool dates8 whole
- Dark chocolate chips1 cup
- Coconut oil, for coating1/2 tbsp
- Almond flour1/2 cup
- Chocolate protein powder3 tbsp
- Raw cacao powder2 tbsp
- Pure maple syrup2 tbsp
- Cashew butter1/3 cup
- Coconut oil, melted1 tbsp
- Pure maple syrup, for caramel2 1/2 tbsp
- Collagen1 tbsp
Method
1. If your dates aren't soft, soak them in hot water for 5 minutes, then drain and pat dry.
2. Process the brownie base ingredients (dates, almond flour, chocolate protein powder, cacao powder, maple syrup) together until dough-like.
3. Press the dough into a 9x5 loaf tin lined with parchment paper and set in the fridge.
4. Whisk the caramel ingredients (cashew butter, melted coconut oil, maple syrup, collagen) together until smooth.
5. Pour the caramel over the brownie base and spread evenly.
6. Place in the freezer for 45+ minutes.
7. Slice into 6 long bars or 12 squares.
8. Melt the dark chocolate chips with the coconut oil in 30-second intervals until smooth.
9. Either dip the bars into the chocolate, letting excess drip off, or simply drizzle chocolate over the top.
10. Place back in the fridge for 10 minutes until the chocolate is firm, then enjoy.
