- Nonfat Greek yogurt284g
- Baking soda4g
- Baking powder2g
- Nonfat Greek yogurt, for frosting68g
- Light cool whip22g
- Powdered sugar substitute24g
- Whey/casein blend protein powder, for frosting1 scoop (optional)
- Oreo, crushed1, crushed (for frosting)
- Almond milk60ml (1/4 cup)
- Light butter35g
- Egg1 medium
- Oat flour45g
- All-purpose flour12g
- Granulated sugar substitute72g
- Whey/casein blend vanilla protein powder2 scoops
- Black cocoa powder25g
Method
1. Preheat the oven to 350°F (175°C).
2. Mix the Greek yogurt, almond milk, light butter and egg in one bowl; mix the oat flour, all-purpose flour, sugar substitute, protein powder, black cocoa, baking soda and baking powder in another.
3. Combine wet and dry ingredients until smooth with no clumps (add more almond milk if the batter is too thick).
4. Pour the batter into a sprayed or parchment-lined loaf tin and bake for 40–45 minutes, slightly underbaking for a softer texture.
5. While it bakes, mix the frosting: Greek yogurt, light cool whip, powdered sugar substitute, protein powder and crushed Oreo. Refrigerate for 10 minutes.
6. Frost the cooled loaf, add the decoration Oreo, and slice into 8.
