  • Egg1 medium egg
  • Nonfat Greek yogurt1 cup
  • Almond milk1/4 cup
  • Oat flour1/4 cup
  • Coconut flour2 tbsp
  • Granulated sugar substitute1/3 cup
  • Protein powder1 1/2 scoops
  • Dark cocoa powder1/4 cup + 1 tbsp
  • Baking soda1/2 tsp
  • Baking powder1/2 tsp
  • Nonfat Greek yogurt (frosting)2/3 cup
  • Confectioners sugar substitute (frosting)1/4 cup + 2 tbsp
  • Sugar-free cheesecake pudding mix (frosting)1 tbsp
  • Oreo, crushed (topping)3/4 cookie
Method
1. Preheat oven to 350F (175C). 2. Mix the wet ingredients (egg, Greek yogurt, almond milk) in one bowl. 3. Mix the dry ingredients (oat flour, coconut flour, sweetener, protein powder, cocoa, baking soda, baking powder) in another bowl. 4. Combine wet and dry; mix until smooth. 5. Pour into a greased or lined small loaf pan. 6. Bake about 40 minutes (slightly underbake for fudginess). 7. While baking, mix the frosting ingredients; chill 10 minutes. 8. Frost the cooled loaf, add crushed Oreo topping, and slice into 4.
