Oven-Baked Apple Protein Pancakes

Ingredients
- egg2 eggs (100 g)
- erythritol-stevia mix60 g
- oil15 ml
- salta pinch
- flour110 g
- baking protein50 g
- almond milk400 ml
- apples2-3 apples (450 g)
- cinnamon cereal6 g
Method
Preheat the oven to 200C (390F) top and bottom heat.
Mix the sugar substitute, salt, oil and eggs in a bowl.
Add the flour, baking protein and milk alternately, stirring until smooth.
Peel, core and chop the apples into small pieces.
Pour the batter onto a parchment-lined baking sheet and distribute the apple pieces evenly.
Bake about 20 minutes until golden brown.
Cut into wedges, top with cinnamon and sugar substitute, and enjoy — keeps 3 days refrigerated.
