Peanut Butter Stuffed Protein Pancakes

Ingredients
- oat flour50 g
- coconut oilfor frying
- peanut butter (stuffing)6 tsp (30 g)
- vanilla whey protein1 scoop (30 g)
- baking powder1/2 tsp
- cinnamon1 tsp
- sea salta pinch
- banana1 banana, mashed (120 g)
- egg1 egg (50 g)
- peanut butter1 tbsp (15 g)
- milk100 ml
Method
Mix the dry ingredients: oat flour, whey protein, baking powder, cinnamon and salt.
Add the mashed banana, egg, 1 tbsp peanut butter and milk; mix until no lumps remain.
Heat a little coconut oil in a non-stick pan over low-medium heat.
Add a quarter of the mixture to the pan; spoon peanut butter into the pancake and cover with a little more mixture.
Fry 2-3 minutes, flip and fry 2-3 more minutes. Repeat until all batter is used.
Stack and top with berries, chopped nuts and sugar-free syrup.
