Ingredients
- Ground oats (oat flour)1.5 cups (150g)
- Chopped almonds¼ cup (25g)
- Chickpea flour¼ cup (30g)
- Baking soda½ tsp
- Salt½ tsp
- Cinnamon½ tsp
- Peanut butter½ cup (125g)
- Maple syrup¼ cup (60ml)
- Eggs2
- Skyr1 cup (255g)
Method
1. In a bowl, mix the dry ingredients: ground oats, chickpea flour, baking soda, salt and cinnamon.
2. In another bowl, mix the peanut butter and maple syrup (or agave) well.
3. Add one egg at a time, mixing until incorporated.
4. Add the skyr; mix to combine.
5. Fold in the dry ingredients gently with a spatula until a sticky dough forms.
6. Scoop out the dough and flatten with a spoon to the desired size.
7. Bake at 350F (180C) for 12-15 minutes. Cool 5 minutes in the tray, then transfer to a wire rack.
