Ingredients
- Nonfat Greek yogurt120g
- Cornstarch8g (1 tbsp)
- Baking soda3g (½ tsp)
- Baking powder2g (½ tsp)
- Salt2g (½ tsp)
- Chocolate chips or chunks28g (2 tbsp)
- Light butter, softened50g (3½ tbsp)
- Medium egg1 medium egg
- Vanilla extract1 tsp (5mL)
- All-purpose flour90g (¾ cup)
- Vanilla casein protein powder60g (~2 scoops)
- Vanilla whey protein powder15g (½ scoop)
- Brown sugar substitute140g (¾ cup)
- Granulated sugar substitute40g (3 tbsp)
Method
1. Preheat the oven to 350F and line a baking sheet with parchment paper.
2. Add the Greek yogurt, softened light butter, brown sugar substitute and granulated sugar substitute to a bowl; mix until as smooth and creamy as possible.
3. Mix in the egg and vanilla extract.
4. In a separate bowl, combine the flour, casein, whey, cornstarch, baking soda, baking powder and salt.
5. Add the dry ingredients to the wet ingredients and mix until a thick cookie dough forms. Flour hands if needed to form balls.
6. Fold in the chocolate chips.
7. Chill the dough 30 minutes.
8. Divide into 6-8 cookies, place on the baking sheet and lightly flatten each one.
9. Bake 9-12 minutes, until edges are set and centers still look slightly soft. Cool on the baking sheet 10-15 minutes.
