Salmon Burger with Creamy Dill Sauce

Ingredients
- canned wild salmon15 oz can (425g)
- salt & pepperto taste
- non-fat Greek yogurt1/2 cup (120g)
- garlic1 clove crushed
- dill2 tbsp chopped (8g)
- lemon juice2 tbsp (30g)
- arugulafor serving
- whole grain buns4 buns (240g)
- red onion1/4 cup diced (40g)
- red pepper1/4 cup diced (40g)
- dill1/4 cup chopped (15g)
- lemon zestzest of 1 lemon
- lemon juice1/4 cup (60g)
- egg1 egg (50g)
- oat flour1/3 cup (40g)
- cayenne pepper1/4 tsp
Method
Combine all dill sauce ingredients in a small bowl; season with salt and pepper and set aside.
Combine the salmon, onion, red pepper, dill, lemon zest, lemon juice, egg and oat flour in a large bowl. Season with cayenne, salt and pepper.
Shape into four 4-ounce burger patties.
Cook in a large non-stick pan over medium heat, 4 minutes per side, until browned and heated through.
Toast the buns and layer the bottom halves with arugula.
Place a burger on each, top with 2 tbsp dill sauce, close and enjoy.
