Sesame Red Lentil Bagels
Flourless, gluten-free bagels made from red lentils and crowned with sesame, pumpkin and sunflower seeds - high in plant protein and fibre.

Ingredients
- red lentils1 cup (250 g), soaked
- sesame seedswhite and black, for topping
- pumpkin seedsfor topping
- sunflower seedsfor topping
- psyllium husk5 tbsp
- yogurt1/4 cup (60 g)
- olive oil2 tbsp
- salt1/2 tsp
- baking soda1/4 tsp
- chili flakes1 tsp
- green chilies2, finely chopped
- fresh coriandera handful, chopped
Method
Wash and soak the red lentils for 4-6 hours or overnight. Drain completely.
Add the lentils, psyllium husk, yogurt, olive oil, salt, baking soda and chili flakes to a blender.
Blend until a smooth, thick dough forms.
Mix in the chopped green chilies and coriander.
Divide into 6 portions and shape into bagels.
Sprinkle white and black sesame seeds, pumpkin seeds and sunflower seeds on top, pressing gently.
Bake at 350F for 25-30 minutes until golden and firm. Cool a few minutes before serving.
