Sloppy Joe Sweet Potato Bowls

Ingredients
- lean ground beef (96/4)906 g (2 lbs)
- Worcestershire sauce15 g
- low sodium beef broth120 g
- brown sugar substitute30 g
- garlic powder1 tbsp (8 g)
- onion powder1 tbsp (8 g)
- paprika1 tbsp (8 g)
- salt1 tbsp (15 g)
- black pepper2 tsp (5 g)
- reduced-fat cheddar cheese2 cups (224 g)
- olive oil sprayas needed
- sweet potatoes1500 g
- onion1 large (300 g)
- bell pepper1 (300 g)
- minced garlic4 tbsp (30 g)
- ketchup80 g
- mustard20 g
- BBQ sauce40 g
- tomato paste50 g
Method
Air fry the diced sweet potatoes at 400F for 25-35 minutes, shaking occasionally, until crispy.
Cook the ground beef until halfway browned, then add the onion and bell pepper; cook until softened.
Stir in the garlic, tomato paste, Worcestershire, ketchup, mustard, BBQ sauce, seasonings, brown sugar substitute and beef broth.
Simmer 10-15 minutes until thickened.
Build 5 bowls with sweet potatoes, sloppy joe beef and cheddar cheese.
Store 4-5 days in the fridge (freeze longer); reheat in the microwave or air fryer until warm.
