Ingredients
  • pork shoulder (trimmed)600 g
  • paprika1 tbsp (8 g)
  • garlic powder1 tbsp (8 g)
  • onion powder1 tbsp (8 g)
  • cinnamon1/2 tsp (2 g)
  • saltto taste
  • black pepperto taste
  • apples300 g, sliced
  • onion300 g, sliced
  • carrots200 g, sliced
  • garlic3 cloves (15 g)
  • chicken broth400 ml
  • apple cider vinegar1 tbsp (15 g)
  • maple syrup40 g
  • Dijon mustard1 tbsp (15 g)
Method
Add the sliced onions to a large dish and place the pork on top. Rub the pork with the mustard, paprika, garlic powder, onion powder, cinnamon, thyme, salt and pepper. Pour over the maple syrup, apple cider vinegar and chicken broth. Add the sliced apples and carrots around the pork. Cook in a preheated oven at 150C for 3 to 3.5 hours. Remove, shred the pork with two forks and mix back through the sauce; serve with rice, wraps, salads or mashed potatoes.
