Method
1. Preheat oven to 165C (325F). Mix the crust ingredients; press into a 9-inch springform pan. 2. Beat the cream cheese until smooth; mix in the powdered erythritol and protein powder. 3. Add the eggs one at a time, then mix in the strawberry yogurt, vanilla and salt. 4. Pour into the crust; bake 45-50 minutes until the edges are set and the center still jiggles slightly. 5. Turn off the oven, crack the door, and let sit 20-30 minutes. Cool completely, then chill at least 6 hours. 6. Cook the strawberries with monk fruit; stir in a cornstarch slurry (cornstarch mixed with cold water) until thick. Cool. 7. Spread the topping over the cheesecake, slice and serve.
