Vegan Lentil Meatballs

Ingredients
- brown lentils1 cup (190 g)
- cumin1/2 tsp
- rolled oats1 cup (90 g)
- coconut oil1 tbsp (15 ml)
- flax seeds2 tbsp (20 g)
- parsley1 handful (20 g)
- onion1, chopped (150 g)
- spring onion2 stalks (30 g)
- tomato paste2 tbsp (30 g)
- soy sauce2 tbsp (30 ml)
- salta large pinch
- black peppera large pinch
Method
Soak the brown lentils in water for 6 hours or overnight. Rinse, then boil in a pot for 20 minutes. Rinse again and set aside.
Roughly chop the onion and spring onion.
Add the lentils with all the other ingredients to a food processor.
Blend well until you reach a smooth consistency, then form little balls from the dough and place them on a plate.
Bring a pan to medium-high heat and add the coconut oil.
Fry the meatballs for around 5 minutes, flip and fry the other side for 3-5 minutes until crisp and brown.
